Michael Glennon - Owner, Chef

Chef Michael Glennon had a desire for cooking at a very young age.  Born in Boston of an Irish-Italian family, Michael jumped out of his playpen whenever he saw his mother with their pasta machine.  Growing up, he was in the kitchen helping his mother prepare another one of her excellent dishes. He washed dishes at his first restaurant job, then spending the next three years working in a delicatessen.  While attending college, Michael spent his summers on Cape Cod.  He started as a pantry cook for Chillingsworth, a five star restaurant in Brewster. While at Chillingsworth learning more line positions, his best experience was cooking a six-course dinner at the James Beard House in New York City with chef Nitzy Rabin. Michael decided to leave the east coast and move west landing in Vail, Colorado at Sweet Basil restaurant as a line cook.  He gained a great deal of knowledge and experience working under chef David Walford. He also had the opportunity to work with Robert del Grande of Cafe Annie’s, Houston Texas while Robert was visiting Vail. After a few years, he transferred to Montauk Seafood Grill. While at Montauk, Michael cooked side by side with Chef Patrick Clark and Chef Mark Milletello. Hired as the sous chef and quickly becoming chef at Montauk, Michael’s style and creativity contributed to Montauk’s growth and prosperity.    It was then time for him to have his own restaurant! Michael married Janine and they opened Vista Restaurant in Avon, Colorado in December 1999.  They moved Vista to the Country Club of the Rockies in May 2007, renaming it Vista at Arrowhead. Spending a great deal of time in Denver with their only son, they decided to open another Tuscan focused restaurant naming it VistaVino Modern Grill.

Janine Glennon - Owner, Operator

Originally from Miami, Florida, Janine Glennon dreamed of living in the mountains since she was a small girl. Her parent’s loved to dine out and were always having guests over for dinner.  She moved to Knoxville Tennessee for college where she worked in a fine dining establishment as a bookkeeper.  She fell in love with the restaurant business: the camaraderie and making people happy with good food and wine.
She quickly moved into restaurant management at Copper Cellar.  After 5 1/2 years at Copper Cellar, she decided to move back to the beach and landed in Hilton Head, SC.  That did not last long because of her love for the mountains.  Her brother was living outside of Denver and he recommended that she job hunt in Vail, CO because of the number of fine dining establishments per capita.
Janine took the advice of her brother and landed a job at the well-known restaurant, Sweet Basil, where she started as a server and quickly moved to management.  She also worked part time at Montauk Seafood Grill, Sweet Basil’s sister restaurant.  After  years at Sweet Basil, Janine transferred to Montauk as the Dining Room Manager.  The love of her life was appointed Head Chef and they worked as a team there for many years.
